Ever walk into a grocery store late summer/early fall and wonder what to do with pumpkins other than carve them into jack-o-lanterns? Say no more. Here I present to you, one of the most underrated and underestimated squashes on the scene. Delicata Squash. The superior squash. I’d choose these over fries. Packed with vitamin A, you can eat the whole vegetable, including the skin. They taste amazing on their own, but one day I decided to make it like this and my life has never been the same. I may have eaten it all.. By myself.. In one sitting.

INGREDIENTS
Delicata Squash
2 delicata squash, cut into ½ inch rings
2 tbsp olive oil
½ tsp salt
½ black pepper
Green Romesco
2 green peppers, roasted, skins peeled and chopped
2 garlic cloves, minced
1 tbsp dill, chopped
1 tbsp almonds, slivered
1 tbsp sherry vinegar
¼ cup parmesan cheese
⅓ cup olive oil
⅛ tsp salt
⅛ tsp black pepper
Maple Tahini
¼ cup tahini
1 tbsp maple syrup
Spiced Candied Hazelnuts
1 cup hazelnuts
¼ tsp garlic powder
¼ tsp onion powder
¼ tsp salt
¼ tsp black pepper
¼ cayenne pepper
¼ tsp smoked paprika
¾ cup sugar
3 tbsp water
METHOD
Delicata Squash
Step 1: Preheat oven to 375F. Scrub outside of squash with brush until very clean. Cut ends off to create 2 flat edges, scoop out seeds.
Step 2: Slice squash into ½ inch rings.
Step 3: Rub with olive oil, salt and pepper.
Step 4: Place in pre-heated oven. Roast for 20 minutes, or until browned and crispy. Set aside.
Green Romesco
Step 1: Add all ingredients to blender, and blend until smooth. Adjust seasoning per taste.
Maple Tahini
Step 1: Whisk maple syrup into tahini, set aside.
Spiced Candied Hazelnuts
Step 1: Heat sugar and water in a small saucepan over high heat, swirling, until sugar dissolves. Bring to a simmer, and cook, swirling occasionally, until medium amber, about 4 minutes. Add hazelnuts, garlic powder, onion powder, salt, black pepper, cayenne pepper and smoked paprika and stir for 1 minute to coat.
Step 2: Pour mixture onto a baking sheet lined with parchment or a nonstick baking mat, and immediately separate nuts using 2 forks so that each stands alone on sheet. Let cool.
Assembly
Step 1: Layer Green Romesco on a round plate, top with roasted Delicata Squash, Maple Tahini, and Spiced Candied Nuts.
